Cinnamon Raisin Bran Muffins (Fat-Free & Flour-Free)













These are all bran, no-fat, no-dairy, moist muffins with good consistency. The gluten holds them together since there is no conventional flour. They need a large amount of cinnamon, so it should be purchased in bulk (1 lb). Other juices can be substituted for the prune juice. If the consistency of the dough is too dry, add more juice; if too moist, add instant oatmeal.

Dry Ingredients:

  • 3 cups oat bran
  • 1-1/2 cups wheat bran
  • 1-1/2 cups wheat germ
  • 3/4 cups gluten powder
  • 1 Tbs. baking powder
  • 1 Tbs. baking soda
  • 6 Tbs. cinnamon

Wet Ingredients:

  • 3 cups prune juice
  • 2 cups apple sauce
  • 1 cup raisins
  • 1-1/2 cups grated carrots
  • 2 Tbs lemon juice

Heat oven to 375 F. Mix dry ingredients throughly. Blend in juice, apple sauce, raisins and carrots. Add lemon juice at the end to start the CO2 reaction. Place in lightly greased muffin pans and bake for 30 minutes.
